Honey Biscuits.
Ingredients
- 175g butter, cut into small chunks
- 100g caster sugar
- 85g honey
- 1/4 teaspoon ground cinnamon
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 280g self raising flour, sieved
Makes about 25 biscuits.
Method
- Gently melt the butter, sugar, honey and cinnamon in a medium saucepan until the mixture is smooth. Then allow to cool for 10 minutes.
- Put the oven on at 180°C. Prepare 2 shallow oven trays with baking paper.
- When the butter mix is cool, stir in the egg, vanilla and flour. Then roll into teaspoon size balls. Flatten them onto the baking tray. Allow a little room for the circles to spread during cooking.
- Place in the hot oven for 12 minutes, or until golden brown.
- Place on cooling racks to enjoy later.
